I wanted to share a new recipe with you that I found on Chef AJ's site. You can go to her site, www.eatunprocessed.com to see the demonstration. She did not really give any amounts so I will try to estimate amounts for you. Amounts will vary by how many servings you want and how much you like a particular ingredient.
ReplyDeleteSouthwestern Chopped Salad
1 head romaine lettuce, chopped
1 large ripe tomato
1 ripe avocado
1/2-1 cup black beans
1/2-1 cup corn, canned or frozen
baked tortilla strips, you can make these at home or buy low or no oil & salt chips or strips.
I added
6-12 sliced black olives
1-3 scallions, sliced thin
Dressing
1/4-1/2 BBQ sauce, look for no or low oil, salt and added sugar.
That's it! Just toss and eat. This is my new favorite salad. I could not believe how good it tasted with just BBQ sauce as the dressing.

ReplyDeleteAfter Michelle brought in the video of Chef AJ, I went to her site, www.eatunprocessed.com and got two new recipes. One I already told you about, Southwestern Chop Salad and another one I tried last night, Thai Noodles and Sauce. If you go to her site you can see demonstrations of her making these recipes.
Today I made the Mexican Stew that Marsha shared with us, I believe it was at the graduation or one of the first pitch-ins. This recipe has become my parent's favorite because it is so delicious and so easy. I am making the corn muffins that Michele brought last week to go with them. I was going to make the Jalepeno Cornbread, but decided to try this new recipe instead.
I went to a baby shower on Sunday and took Caroline's Blueberry Lemon Muffins and they were a big hit. Everyone wanted the recipe.
I think we have started something here. We are a small group, but we all know people and as we start to share our recipes and our results with our friends and loved ones, our numbers are going to grow. This is a message who's time has come.
I watched a new documentary last night called "Eating". There was one line that really stuck with me. Dr. Anderson, who narrates the video said "the only thing that an animal based diet does well is kill people"! Wow! You can't get much more blunt then that. That is the message, and whether we are blunt, like the good doctor here, or we are more subtle, that is what people need to hear.
I will miss all of you tonight! I wish we were meeting. I am looking forward to seeing all of you on July 10th!!!
