Orange Sauce

This sauce has multiple uses. Serve over French Toast, pancakes, waffles, crepes, or fresh fuit.

Orange Sauce

1 cup orange juice
1 Tbs. honey or agave nectar
1 Tbs. arrowroot or cornstarch
1/2 tsp. orange zest

In a small saucepan stir all ingredients together. Cook and stir over medium heat until thickened and bubbly.

Carob Fudge

Traditionally, on Valentine's Day we give chocolates to our friends. Since learning the effects chocolate has in our bodies, I would like to share with you this quick recipe. It looks like chocolate and has a certain resemblance to dark chocolate in flavor; but it is healthy :) with no bad effects.






CAROB FUDGE

2 cups carob chips
1/3 cup soy milk or almond milk
1 cup walnuts, chopped
1/2 cup peanut butter
1/2 cup coconut, shredded
1 tsp. vanilla

In a pot, combine carob chips, peanut butter and milk. Cook on medium heat stirring constantly until the carob chip have melted. Add walnuts and vanilla and mix well. Spread the fudge on parchment paper to desired thickness and sprinkle the shredded coconut on top. Cut it in squares.

Winter Fruit Tea

This recipe is for my mom's Ponche, a delicious Winter Fruit Tea. Traditionally, this tea is served during winter and  holidays. It can be prepared with only the ingredients of your choosing or using all the ingredients. Very easy to prepare, healthy and fast. Enjoy!


 
 



2 quarts Water
2 medium Apples
1 cup Tamarind
5 Guava fruit
1 cup Sugar cane sticks (Have your grocer peel the sugar cane for you or buy it frozen)
2 Oranges
1/4 cup Hibiscus
1/4 cup Raisins
1/2 cup Cherries
1/4 cup Prunes
1/4 cup Pecans
1/4 cup Orange Juice
Agave Nectar or Honey or Raw Sugar, to taste
1 Tbs. Coriander Seeds

Wash all fruits and chop the apples. Slice the oranges and cut the slices in quarts. Cut the guavas in wedges and remove the seeds. Peel the tamarind and rinse them. In a big pot, bring all the ingredients to a boil except the pecans and orange juice. Let it boil for 3 - 5 minutes, then add  the last 2 ingredients. Serve warm. Enjoy!
