Vegan Migas
INGREDIENTS:
1 Tbs. olive oil
¼ tsp. garlic salt
3 Tbs. fresh cilantro, chopped
½ cup chopped tomatoes
1 tsp. vegetable seasoning
¼ tsp. onion powder
1/3 cup green onions, chopped
¼ tsp. turmeric
Salt (optional, to taste)
2 cups tortilla chips
- Using a non-stick pan sautee onion in olive oil.
- Mash the tofu using a fork and add it into the pan with the onios.
- Add the remaining ingredients and season to taste.
- Cook for about 5 min. on medium heat, stirring a little.
- Serve warm on tortilla chips.
